This wine is very versatile with a variety of different food. It is light enough to pair with fresh and summery appetizers, salads and sides, but also works well with a variety of spicy cuisine such as Thai and Mexican food.
Picked early in September, when the Muscat character of the grapes was very expressive but the flavours in the grapes had not lost their vibrancy and fresh acidity. After a short soak with skins to extract flavours, clear juice was fermented slowly at cool temperatures in stainless steel. Taken off lees immediately following fermentation, the wine was stabilized, filtered and bottled in early 2021 to capture its freshness.
