Winemaking Notes
Sourced from a warm area of the Creek Shores appellation of Niagara-on-the-Lake, this Viognier was picked late in the season to allow the grapes to develop more complex and intense flavours. After soaking on the skins for several hours, the juice was pressed, cold-settled and put into both stainless steal and older neutral oak French barrels. After fermentation, the wines were combined and aged on lees in barrel for several months prior to bottling.
Food Pairings
This wine pairs perfectly with a variety of richer dishes including lobster, butter chicken, pork tenderloin and salmon. It pairs well with a variety of different cheeses especially brie and aged gouda.
