Winemaking Notes
Picked over two passes in early October, in order to help retain crispness and fresh flavours, while also capturing some riper tropical fruit character. The grapes were all selected from Hunter Farms in the Niagara Lakeshore sub-appellation. After pressing the clear juice was fermented slowly, at cool temperatures in stainless steel, taking three weeks to complete to dryness. Taken off lees immediately following fermentation, the wine was stabilized, filtered, and bottled in early 2020 to capture its freshness.
