This wine pairs well with Roasted Chicken, Halibut and Salmon, or rich and creamy dishes like Risotto or Pasta with a white sauce.
Winemaking Notes
This wine, our first White Conception since 2013, is our first Sauvignon blanc/Sémillon blend. It was selected from two lots of wine: a later-harvested portion of Sauvignon blanc grown in the Niagara Lakeshore and Sémillon from the Lincoln Lakeshore. Each wine was fermented and aged independently in older, neutral French oak barrels before being selected for the blend, and then was further aged as a blend in barrels to help gain complexity. Neither of the wines underwent malo-lactic conversion or had any lees stirring, helping the final wine retain some of its fresh, vibrant character while being complimented by tropical fruit flavours and a waxy/honeyed character.
