This wine is the perfect pairing with rich meat dishes such a steak, venison and short ribs. It also pairs well with strong cheese such as aged cheddar and parmigiana-reggiano.
Winemaking Notes
2017 was a cool summer, followed by a hot fall which benefited the final stage of growth for red varietals in the Niagara Region – producing surprisingly good fruit for agworthy red wines. Sourced from three blocks of Cabernet Sauvignon vineyards in warmer areas on Niagara -on-the-Lake. Select barrels were chosen for the final blend after aging for 20 months in French oak before bottling in late summer 2019. Bottled unfined and unfiltered to retain its bold fruit character.
