Winemakers’ Notes
After extensive hop trials we decided to dry-hop the finished cider using hops grown in both Niagara and the Pacific Northwest. The hop varieties we used are a combination of both Citra and Mosaic hops. We feel like there is enough hop impact there, without compromising the flavours of the base cider or overpowering it.
